I've got a few recipes.


Excellent shape for New Year!

Don’t forget the long noodles, too, uncut so you’ll have a long life - apparently, you’re not meant to bite them eithercheese just slurp.

 Plums! I forgot how much I loved canned or jarred plums. On my list.

 I love both shallots and scallions. I've been doing a half baked version of the GBOMBS diet. All I do is include greens, beans, onions, mushrooms, berries and seeds, well nuts instead of seeds, in my diet most days.

The blueberries which are often tart, work well in my vegan whole wheat pancakes. I just use Aunt Jemima wheat pancake mix, EnerG egg replacer, vegan milk any kind,vegetable oil and the blueberries. Organic maple syrup. Quick easy yummy.


The Aunt Jemima mix won’t work for the Chinese pancakes, usually made with rice flour or rice/corn (maize) flour mix. The finer your pancake, the better to wrap your delish fillings from tempting bowls scattered around the table.

No @joanne, LOL I wasn't suggesting the pancake mix for them. Just segued into a way I use blueberries.

By the way I saw a gorgeous new BBC series and the first episode was Australia. 


@Morganna, we have some really yummy GF dried pasta I just tried for the first time tonight, made from red lentils! Looks like the dried tomato/roasted pumpkin flavoured style, but obviously the taste is different. 
I have the penne, we had them as a side accompaniment to braised mixed greens, with a light veggie stock as ‘gravy’. Very nice.

 My ex just tried both the red lentil and the quinoa. He was born in Peru so loves the whole idea of quinoa. I think I tried the red lentil.

I don't avoid wheat, just try to keep an eye on white flour, but behind closed doors, left alone with a box of semolina pasta, all bets are off. There are a few vegetable pastas that I cook with and some of the whole wheat as well. Made one last night with a topping of mushrooms, spinach and garlic sauteed in olive oil. Quick easy and I get to use some of the mainstays of the GBOMBS diet.

Just checked, yes I did the red lentil pasta for Halloween. Posted on Nov. 1. I'll give it another try. The comment said I may not have cooked it long enough.

Blueberry crisp by @pinchofyum ! ⁣
No refined sugars, packed with blueberries and oats, ⁣
this is just like eating granola for breakfast. But better!⁣


RECIPE⁣
1 cup rolled oats⁣
1 cup pecan halves⁣
½ cup almond meal⁣
½ cup unsweetened flaked coconut⁣
pinch of salt⁣
pinch of cinnamon⁣
¼ cup + 2 tablespoons olive oil⁣
⅓ cup real maple syrup⁣
4 cups fresh blueberries⁣



INSTRUCTIONS⁣
mix topping ingredients. in the dish, layer the blueberries, then add the topping. bake for 25-35 mins at 350 until bubbly and then let it rest/set. ...or not! it's yummy either way.⁣

pro tip: cover with foil if it's getting too brown too fast. You can top it with a little glaze, or serve with vegan ice cream, yogurt, or just straight up cold out the fridge. So good!

Tossing out The Moosewood Cookbook. Skimmed through it yesterday and decided most of the recipes had too many ingredients to substitute.

I've been able to replace an egg with a substitute, such as in pancakes but there were recipes that called for 4 eggs or a variety of cheeses. 

Also saw recipes for veggies that had quite a few ingredients that I eschew. If it's one such as celery, green peppers, parsley or cumin, I'll just eliminate the ingredient but if there are a few, I'm assuming the palate of the chef is quite different from mine.

 Sounds delicious. I just saw this dish also with chick peas. I've been growing my own rosemary and some may have survived the cold so I'm going to try it.

Speaking of spiralizing, my friend who’s an occasional food blogger, just sent me a sneak of her sweet potato rösti with aioli parsnip nests. As easy as it sounds. 


Many healthy diets push almonds and walnuts. I'm a fan of pecans and cashews. Going to research and see if they are as healthy. 

I don't like heavy breakfasts so ;I do my vegan protein shake over coffee then when noon rolls around and I'm very hungry I make whole wheat pancakes with blueberries, topped with pecans and maple syrup. Great in these cold winter days. 

I'm going to try a recipe that calls for 2 eggs, like a cake mix, and substitute EnerG egg replacer and see how it bakes.

By the way, a bakery just sent 53 cakes to the Senate Republican with a plea for witnesses and decorated with the words, Don't Go Baking My Heart, A Trial Without Witnesses is Half Baked. etc.

Read an article yesterday that made a case for cashews being more sustainable than walnuts or pecans, and with a better ratio of healthy oils. Unfortunately, I can’t remember which article.


@joanne, you planted the thought of canned or jarred plums in my mind and I haven't been able to find them yet. Have to try another store. I used to see them all the time.

By the way, my mother used to stuff dates with peanut butter and dust them with powdered sugar for the holidays. Just bought some a few weeks ago. I skipped the powdered sugar.


Use the Chinese dates for some of those yummy stuffed date recipes; such a different texture and shade to the sweetness! A hint of licorice, not as sugary as palm dates and they go nicely with savoury & spicy meals.

How Delish opens in West Orange NJ!  Vegans who review restaurants, recipes and vegan food products have been raving about the desserts at How Delish. I was a pop up favorite and now has opened in West Orange. I'm hearing arguments about which dessert is the best but quite a few trusted vegan friends are rallying around the Tiramisu.

I tried Daiya New York Cheesecake and loved it. My ex tried the Key Lime Cheesecake and rated it good but he would not give a rave review because Key Lime Pie is one of his favorite desserts so he was comparing. Nonetheless I'm sure he ate the whole Cheesecake. 

I will try the Key Lime Cheesecake and the Chocolate next. 

I hadn't been in a supermarket in about a month so with a mask and gloves I ventured into Whole Foods and went crazy sampling all kinds of vegan products. I'll share the ratings as I nibble my way through them.
