Traditional Macaroni Salad archived

Looking for a good, easy recipe for a traditional mayonnaise-based macaroni salad for a BBQ.
I searched on foodnetwork.com and most had ham and eggs, which I don't want.

I don't usually make it with mayo anymore but I remember one of the tricks was to add a little vinegar and sugar to get the taste, This recipe below is close and you can omit the eggs.

•2 cups cooked macaroni, drained, rinsed, cooled
•2 hard-cooked eggs, chopped
•1/4 cup chopped celery
•1/4 cup chopped onion
•1/3 to 1/2 cup mayonnaise or salad dressing
•2 teaspoons sugar
•2 teaspoons vinegar
•1/2 teaspoon salt, or to taste
•1/2 teaspoon prepared mustard
•pepper, to taste

This recipe sounds good also:

2 cups dry elbow macaroni, cooked, rinsed, and drained
1/3 cup diced celery
1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon minced flat-leaf parsley
1/2 cup diced vine-ripened tomato (optional)
1/2 cup prepared mayonnaise
3/4 teaspoon dry mustard
1 1/2 teaspoons sugar
1 1/2 tablespoons cider vinegar
3 tablespoons sour cream
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper
Directions
In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

Do people actually eat that? (sorry)

I love macaroni salad! I actually love the macaroni salad from Eden Gourmet, I am tempted to just buy it....

mary2430 - Thanks! I think I will make the first, omitting the hardboiled eggs and adding shredded carrots and possibly peas.

eliz - I've never tried WF. I will probably need more than a pound and I can imagine it costing too much money! Have you tried EG?

Why would they not eat it?

My Iowa church lady cookbook has a multitude of "salads". Tons of mandarin oranges, crushed pineapple, jello, shredded carrots and raisins, Miracle Whip, celery, maraschino cherries, marshmallows and Cool Whip but strangely no macaroni! (Also, not a leaf of lettuce....heh, heh, heh)

It's made from scratch...what's the issue?

Let me know how it comes out, adding the peas and carrots sounds good. Maybe a little green or red pepper. My daughter loves to add tuna to it. Good luck.

some traditional ones add canned tuna to them

Mine is very similar to the first one mary2430 gave the recipe for except that I don't use vinegar - just the mayo, mustard, and sugar- no eggs- and I always put tuna in it- not so much a carrot fan, but peas would be yummy in it! Just made some yesterday!

I haven't tried EG's but on holiday weekends WF usually sells it by the "bucket" and it's pretty reasonable.

I was thisclose to just buying a couple of pounds of macaroni salad, but I saw a container of mirepoix (chopped onions, celery and carrots) at Trader Joes and grabbed it. Chopping is usually a deterrent for me, so this was serendipitous.

I used the recipe posted by mary2430 as a basis and made some adjustments:



•2 cups cooked macaroni, drained, rinsed, cooled
•2 hard-cooked eggs, chopped --> eliminated
•1/4 cup chopped celery
•1/4 cup chopped onion
•1/3 to 1/2 cup mayonnaise or salad dressing --> used Miracle Whip against my wishes. My husband loves Miracle Whip.
•2 teaspoons sugar
•2 teaspoons vinegar
•1/2 teaspoon salt, or to taste
•1/2 teaspoon prepared mustard --> to cut the sweetness of the Miracle Whip, I used dijon mustard instead of regular mustard.
•pepper, to taste
added thawed frozen peas and chopped carrots (I might have preferred shredded, but ya take what get!)

It's delish and it was easy (#2 requirement for me)

Great, I like the mirepoix,tip, I am going to have to try that. I keep saying I am going to Trader Joe's and never get there.

But, chopping makes cooking fun.

My (mom's) tried and true recipe is much like mary2430's, but no sugar, some water to liquify the dressing a bit, and NO measuring whatsoever.

She would also occasionally throw in a drained can/partial can of those teeny shrimp (YUM).

My dad's 'traditional' (in our house!) macaroni salad uses macaroni, mayo, chopped eggs, green onion, celery, sliced black olives, a dash of black olive 'juice' and chopped shrimp. The idea of carrots and peas - so not what I think of when I think of macaroni salad.

I cannot sleep and now I'm starving for macaroni salad.

I am about to give away a family secret here. My mother made macaroni salad in the traditional way as noted in Pippi's recipe but instead of the vinegar and sugar, she used the liquid from sweet pickles (Heinz Gherkins, Mrs. B's Bread and Butter) It was always the hit of the picnic!

I was also thinking about my mother's... It was always very creamy and I now remember that she would dice up Velveeta and stir it in! Between the crunchy celery and the cheese it was always great.

Zayda's (within Eden Gourmet) has excellent Macaroni Salad (and Cole Slaw)

Tried the EG macaroni salad yesterday and it was a hit. Not something I've eaten much of in the past but it was a nice change of pace from my usual potato salad.

I always use the pickle juice ion my potato salad along with some chopped pickles.

My mother used to make this, too, and along the lines of what Calli suggests (the pickle juice). She also made one, more of an entree I suppose, that involved tuna, peas, onions, celery and the mac and mayonnaise. In those days, lacking a/c but having to feed us, she resorted to mac salad, potato salad, cold beets or cuke salad in hot weather.

My kid likes the mac salad from King's, which I recall has some shredded carrots in it.

Pippi, you have my sympathies on the Miracle Whip. Some people adore it but I'm one who cannot bear it at all. I'm a Hellman's or home made mayo person. The latter is not that hard using the Joy of Cooking's blender recipe, and quite a boost to potato or macaroni salad.

Me too. I was at Whole Foods yesterday, and I didn't have time to cook after shopping, as I was hurrying somewhere else, so I bought their macaroni salad. I tossed some cannellini beans in. It was an excellent snack.

That sounds like a good idea! I am sorry that I waited until the end of the summer to make this for the first time. :wall: I need to try the pickle juice and the apple cider vinegar!

It really is my favorite prepared macaroni salad . It's not too mayonnaise-y

i love miracle whip. it is glorious. regular mayo... double blech. but i like adding dijon or a whole grain mustard with miracle whip to these kinds of salads... it is a nice yin-yang-balancey thing. oh, and celery seed, white pepper, and apple cider vinegar. voila, you have salad base. (oh, and i never add sugar... if i want sweet, like if i'm adding pesto or balsamic vinegar and want to balance it with a little sweet, i use a bit of honey.)
