Seems like vinegar and baking soda are the way to go.

No bleach for stainless steel.

What he said. Then follow up with a monthly sanitizing vinegar/sanitizing rinse.
I'm a bit baffled. My Bosch uses pretty hot water and dishwashing detergent is pretty harsh stuff. How can mold or bacteria survive in that environment.
Also the last pic you posted shows a problem. The flexible drain line that comes from the DW to the pvc drain pipe should have a high loop instead of just be laying loose on the floor of the cabinet. The way it is now I expect that junk from the sink can back up that hose. It’s not complicated- just put a screw or hook or something high up on the back wall and hang the tube on it.

That would be hard to do given it's length, which looks to be about 8 feet longer than it needs to be.
notice the tube in that pic is dirty from the connection to the low point. The OP’s is pretty much all dirty.
also in that picture the loop is behind the dishwasher, which is why it enters the sink cabinet up high. In the OP picture it enters low. Like Red says, run it up to the top of the sink cabinet after it enters the cabinet, and the excess doesn't much matter.
not for nuthin, I believe I remember that Bosch's are notorious for not using steam/dry completely. the dishes would remain with droplets. might or might not be related but just interesting point and why when I changed mine I didn't get one.
Thanks for your thoughts everyone. I did two vinegar rinses and moved the tube up and tried looping the excess higher up after reading this... The inside of the machine is now cleaner, but it still gets stuck on 1 minute left for about 20-30 minutes. Not sure if I should try to cut the drain pipe and make it shorter? (I am NOT handy, btw). The dishes are clean and dry once it is finally finished, so I do think it is heating up properly, just weirdly stuck at the end of the cycle. If not the hose, who would you call to come in and take a look? Plumber? Appliance repair? Any recommendations? TIA!
I would try an appliance person. We've used George's Appliance in New Providence a few times.
so, my beloved Bosch dishwasher which has never let me down has been acting weird lately... taking longer and longer to run (would read 1 minute left for about 20 minutes, etc). I kept meaning to call Bosch but put it off as it wasn’t urgent til unloading the dishwasher today, and while all the dishes appear clean, I realized the entire inside of the machine has mold around the joints, in the filters, wheels, etc.
