Maybe Cedar Ridge on Ridgewood. When they were Cupcake Corral they seemed to have a C&W decor (assuming C&W is country and western). 2-3 days should be enough time if someone really wants to do it.
I've gotten great cakes at splurge in millburn. Wegmans cakes (homemade chocolate) are always a hit too. In a pinch, maybe just stick some c&w theme toys in the cake?
We had a great small dinosaur theme cake made by Pink Cupcakes in the Valley Arts District in West Orange. We mostly got cupcakes for our son's party, but we wanted to get a small cake so he had something a little bigger than a cupcake to deal with.
I'm not sure exactly what notice she needed, but it was less than two weeks. It's worth asking. And her cupcakes are pretty wonderful things which we tend to prefer to the ones from Able Baker.

Yeah, we were pretty happy with it. We we a tad overwhelmed by our party as we recently moved to South Orange and this was the first time a lot friends were seeing our house. We didn't really give her any direction other than "dinosaurs". We were very pleased when we opened the box!
I would go to ShopRite as I've had great success there, with very moderate pricing. But I see that's off the list. Sorry.
